Oak Island Resort welcomes Trish Foy

Food service a key for Oak Island Clubhouse and Creemee

A new director of food services joined Oak Island Clubhouse in April of this year attending both the Clubhouse at the golf course and the Oak Island Creemee near the entrance to the camping area of Oak Lake Beach. Trish Foy is originally from Oak Lake so she’s no stranger to the community and area.

“I was first waitressing at the Oakland Hotel in Oak Lake when I was about 13 or 14 years old,” says Foy. “I now run the kitchen here at Oak Island Clubhouse and also take care of the Creemee as well.”

Foy adds that, unlike the ice cream shop, the Clubhouse does not offer a takeout menu as of yet, but that may change in the future.

Foy says they serve pizza, sandwiches, appetizers, nachos, chicken fingers, and chicken wings at the Clubhouse restaurant.

“We introduced a new item this summer called corn ribs,” says Foy. She says they are fresh on the market and consist of cobs of corn cut into quarters, lightly breaded, deep fried, and finally drizzled with sweet barbeque sauce.

“They are like a vegetarian rib alternative, but you eat them like you eat corn on the cob.”

Foy says they have held three or four tournaments this year along with a ladies and men’s night which is very popular. The restaurant serves burger bars, pizza and wing buffets, and breakfast buffets for these events. Between the Clubhouse and the Creemee, there’s a kitchen crew of 12 employees.

“Cooking is my passion,” says Foy. “I’ve been cooking since I was about eight or nine years old. My Mom taught me when I was young and showed me all the tricks of cooking.”

Foy says the Clubhouse has been open in the afternoon through the evening meal from Wednesday to Sunday however the hours will be changing this month as daylight diminishes. The fall hours will serve the lunch crowd through the late morning and throughout the afternoon.

”We will be closing for the season once the golf course is done,” adds Foy. She adds that she will probably take the winter off but boredom will probably set in and she’ll want to go back to work.

“There are a few options in Brandon that I can go to work at,” says Foy, but she plans to be back to Oak Island Clubhouse and the Creemee next spring.
